I had a nutty idea -- how about a dessert recipe? People have been asking for quick and easy desserts, so let’s have a go at it!

To prepare these delightful cookies, follow these simple steps:

1. Preheat your oven to 350°F. Line two baking sheets with parchment paper to prevent sticking.

2. Whisk the sugar cookie, pistachio pudding, and flour in a mixing bowl. It is okay if there are some clumps in the mixture.

3. Add the melted butter and eggs to the dry mixture. With an electric mixer, beat the ingredients for approximately 2 minutes or until well combined. This will create a smooth and creamy dough.

4. Using a spatula, fold in the chopped pistachios and dried cranberries into the dough, ensuring an even distribution of these delightful additions.

5. Scoop out spoonfuls of dough and place them onto the prepared baking sheets, leaving enough space between each cookie for them to spread while baking.

6. Bake the cookies for 9-11 minutes or until the edges turn a very light golden brown. Keep a close eye on them to avoid over-baking. The cookies will continue to firm up as they cool.
